After the winemakers bottle this bubbly based on the biodynamic calendar, they submerge them under the Atlantic Ocean for 10 months. The internal pressure of the champagne in the bottle matches the pressure of the water around it.
This process provides characteristics of this natural environment that are apparent on the outside of the bottle’s final product and inside. When popped open, the aromas and flavors of the champagne are reminiscent of the air of the sea.
